Ingredients

  • 1 pack immi ramen
  • 1/4 tsp grated ginger
  • 1 garlic clove, minced
  • 2 cups chicken broth
  • 1/8 tsp turmeric
  • 2 tsp soy sauce
  • ¼ cup coconut milk
  • ½ cup shredded cooked chicken
  • Handful of bok choy leaves, chopped
  • 1 soft-boiled egg
  • Toppings: thinly sliced green onions, chili oil and squeeze of lemon

Instructions

  1. In a small pot, heat 1 tbsp of neutral oil over medium heat. Add garlic and ginger and cook for 30 seconds or until fragrant.
  2. Pour in chicken broth and add turmeric, soy sauce and coconut milk. Stir until well combined and let simmer for 2–3 minutes.
  3. Then, add the immi ramen noodles and cook for 5 minutes. Add chicken and bok choy during the last minute.
  4. Plate ramen in a bowl and top with the soft-boiled egg, green onions, chili oil and squeeze of lemon. Enjoy!
