Ingredients

  • 1 immi Spicy Red Miso packet
  • ½ cup coconut milk
  • 1 tsp red curry paste
  • 1 tsp fish sauce
  • 1 carrot, thinly sliced into rounds
  • Handful of your favorite mushrooms, thinly sliced
  • Handful of snow peas
  • Toppings: lime wedge, thinly sliced green onions, cilantro and Serrano pepper

Instructions

  1. In a small pot, bring 2 cups of water to a boil. Add half of the spice packet and mix until well combined. 
  2. Then, add the coconut milk, curry paste and fish sauce and mix until well combined.
  3. Add the carrots and simmer for 5 minutes. Then, add the ramen noodles, mushrooms and snow peas and simmer for 4 more minutes. Stir occasionally.
  4. Add ramen noodles to a bowl and top with snow peas, mushrooms and carrots. Pour broth all over and garnish with a squeeze of lime, green onions, cilantro and Serrano pepper. Enjoy!🍜
