Mango Sticky Rice

Ingredients

  • 1 cup cooked sticky rice
  • ¾ cup coconut milk
  • 4 tbsp sugar
  • 1 ripe, sliced mango
  • Sauce:
  • ¼ cup coconut milk
  • ½ tbsp cornstarch
  • 1 tbsp sugar

Instructions

  1. In a bowl, mix coconut milk and sugar. Add cooked sticky rice, and mix until well combined.
  2.  Set aside and let the rice soak in the coconut milk mixture for 10 minutes.
  3. For the sauce, mix all of the ingredients together in a microwave-safe bowl. Microwave the mixture for 1 minute.
  4. Plate coconut sticky rice and sliced mangos, then pour the coconut sauce over the rice. Optionally, top with sesame seeds or yellow mung beans. Enjoy!
