Add the chopped apples and cinnamon. Cook while stirring until the apples soften (about 3–5 minutes). Mix the cooked apples with the oats until well combined. For steamed egg, in a heat-safe bowl, whisk together the eggs, warm water, and salt. Place the bowl in a pot. Add hot water to the pot until it reaches halfway up the bowl. Cover the pot and cook over low–medium heat for about 12 minutes, keeping the water at a gentle simmer. Sprinkle scallions on top and drizzle with soy sauce. Continue steaming for 3 more minutes. Enjoy the traditional breakfast with any kind of tea.
