Ingredients

Servings: 2
  • 2 sheets of rice paper
  • 2 eggs
  • 2 green onion stalks, thinly sliced
  • 1/3 cup vegetable oil
  • 1 immi ramen packet, crushed into small pieces
  • Toppings: pork floss, Kewpie mayo, sriracha, cilantro

Instructions

  1. In a small bowl, crush the immi ramen noodles into small, bite-sized pieces. Set aside.
  2. In a small bowl, whisk eggs until fully mixed and set aside.
  3. Heat a small pot over medium high heat. Add the vegetable oil and green onions, cooking for a couple of minutes until green onions are softened. Set aside.
  4. Heat a nonstick pan over medium high heat. Add a rice paper sheet and use a spatula to press it into the pan. Because the rice paper is dry, it doesn’t lie flat, so be sure to keep pressing down on all sides for a couple of minutes.
  5. Add 2-3 spoonfuls of egg onto the rice paper and use the back of a spoon to spread it. Let it sit until you see the egg start to cook. Then, add 2-3 spoonfuls of scallion oil on top of the eggs. Cook until egg is fully cooked. Remove from the pan.
  6. Top the pizza with pork floss, crushed immi noodles, Kewpie mayo, sriracha and cilantro. Enjoy!
