Ingredients

  • 1 cup spinach
  • 1 cup basil
  • 1 clove garlic
  • 2 tbsp pine nuts
  • ½ oz. lemon juice
  • ½ tsp salt
  • ½ tsp pepper
  • 4 oz. olive oil
  • 1 shiitake mushrooms, thinly sliced
  • 1 cooked immi noodles
  • green onions

Instructions

  1. In a blender, put 1 cup of spinach, 1 cup of basil and 1 clove of garlic.
  2. Next, add in 2 tablespoons of pine nuts and squeeze out ½ oz. of lemon juice.
  3. Sprinkle in ½ teaspoon of salt and ½ tsp of pepper.
  4. Drizzle 2 oz. of olive oil and blend it all up.
  5. Pour out the pesto into a bowl.
  6. Add pesto to the bowl of cooked immi noodles and mix.
  7. Plate the pasta and add shiitake mushrooms, green onions, and leaves for garnish.
