Chop the cucumbers into bite-sized pieces. In a mason jar, put the chopped cucumbers. Pour in 2 tablespoons of tamari, 1 teaspoon of mirin, and 1 teaspoon of sesame oil. Next, add 1 teaspoon of rice wine vinegar and drizzle with ½ tablespoon of date syrup. Sprinkle in 2 teaspoons of chilli flakes. Mince two cloves of garlic and add them to the mason jar. Close the jar and shake to mix the ingredients together. Let it chill in the fridge for one hour and enjoy!
