Ingredients

  • 2 Idaho potatoes (boiled and mashed)
  •  1-2 tsp salt
  • Shredded mozzarella cheese
  •  1 cup flour
  • 2 eggs, beaten
  •  1 Spicy “Beef” immi
  • 3 cups vegetable oil

Instructions

  1. In a large bowl, mix together 1 tsp of salt with the cooled mashed potatoes (add more salt to taste).
  2. Divide the mashed potato mixture into 4 portions. Then, shape each portion into flatten ovals.
  3.  Place 1 tbsp of shredded mozzarella into the center of the oval, then mold the potato to cover the cheese making sure to keep the oval shape.
  4. Repeat this process until you have 4 oval-shaped patties.
  5. Coat each patty in flour, eggs, and crushed immi ramen noodles.
  6. In a deep skillet, heat the vegetable oil until it reaches 350F. Cook the croquettes for 3 minutes on each side, or until golden brown.
  7. Toss the cooked croquettes in the Spicy Beef immi spice packet. Optionally, serve with tonkatsu sauce and enjoy!
