While oven is preheating, heat a frying pan over medium-high heat. Add 1 tbsp olive oil and brown the ground beef, seasoning with salt and pepper. Set aside. When oven is preheated, season cherry tomatoes with olive oil, salt and pepper and roast until blistered, about 5-7 minutes. Check on them occasionally to make sure they don’t burn. While tomatoes are roasting, add 1.5 cups of water to a small pot and bring to a boil over high heat. Add the spice packet and shiitake mushrooms and lower the heat to medium. Cook until the mushrooms are slightly softened, about 2 minutes. Then, add the fish cakes and noodles, and cook for 6 minutes. In the last 2 minutes of cook time, add the enoki mushrooms. Assemble your ramen and top with the shiitake and enoki mushrooms, cherry tomatoes, ground beef, fish cake and hardboiled egg. Enjoy!
