Ingredients

  • 1 pack immi Spicy Red Miso ramen
  • 1 cup unsweetened oat milk
  • 1 cup water
  • 1 tbsp white miso paste
  • 1 tsp matcha powder
  • 3 crimini mushrooms, thinly sliced
  • 1 soft boiled egg
  • Green onions, thinly sliced
  • Optional toppings: soft-boiled egg, green onions, sesame seeds, tofu cubes, sautéed mushrooms


Instructions

  1. Boil the noodles according to package instructions, then drain and set aside.
  2. In a pot, combine plant-based milk and water. Heat gently (don’t boil).
  3. Whisk in miso paste and matcha powder until smooth.
  4. Add the immi soup base and stir well.
  5. Add mushrooms and simmer for 2–3 mins until hot and creamy.
  6. Pour broth over the noodles.
  7. Top it off with your favorite add-ons: a jammy egg, green onions and extra matcha powder for extra flair.
