Add the ramen noodles and cook 1-2 minutes under the suggested cook time until al dente. Reserve ½ cup ramen water, then drain the ramen. Add the butter, miso and ½ cup ramen water to the pot and whisk over medium heat until miso breaks down, 1-2 minutes. Add half the spice packet, the ramen noodles and parmesan. Stir vigorously until cheese is melted and sauce emulsifies. Season with black pepper to taste. Plate ramen and top with hot garlic oil, seaweed and fried shallots. Squeeze some lemon and enjoy!
