Ingredients

- 1 cup spinach
- 1 cup basil
- 1 clove garlic
- 2 tbsp pine nuts
- ½ oz. lemon juice
- ½ tsp salt
- ½ tsp pepper
- 4 oz. olive oil
- 1 shiitake mushrooms, thinly sliced
- 1 cooked immi noodles
- green onions
Instructions
- In a blender, put 1 cup of spinach, 1 cup of basil and 1 clove of garlic.
- Next, add in 2 tablespoons of pine nuts and squeeze out ½ oz. of lemon juice.
- Sprinkle in ½ teaspoon of salt and ½ tsp of pepper.
- Drizzle 2 oz. of olive oil and blend it all up.
- Pour out the pesto into a bowl.
- Add pesto to the bowl of cooked immi noodles and mix.
- Plate the pasta and add shiitake mushrooms, green onions, and leaves for garnish.
