Ingredients

- 2 eggplants
- 2 tbsp mirin
- 2 tbsp agave
- 2 tbsp sake
- 4 tbsp miso
- sesame seed
- green onion
Instructions
- Cut the eggplants in half and score them.
- Oil up the eggplants and get them in the oven for 15 minutes at 350 degrees.
- For the miso paste, mix 2 tbsp of mirin, 4 tbsp of agave, 2 tbsp of sake, and 4 tbsp of miso in a pot.
- Mix and let it simmer for 3 minutes.
- Spread the miso on the baked eggplant and put it back into the oven until its golden brown.
- Garnish with sesame seeds and green onions.
