- 2 Idaho potatoes (boiled and mashed)
- 1-2 tsp salt
- Shredded mozzarella cheese
- 1 cup flour
- 2 eggs, beaten
- 1 Spicy “Beef” immi
- 3 cups vegetable oil
Instructions
- In a large bowl, mix together 1 tsp of salt with the cooled mashed potatoes (add more salt to taste).
- Divide the mashed potato mixture into 4 portions. Then, shape each portion into flatten ovals.
- Place 1 tbsp of shredded mozzarella into the center of the oval, then mold the potato to cover the cheese making sure to keep the oval shape.
- Repeat this process until you have 4 oval-shaped patties.
- Coat each patty in flour, eggs, and crushed immi ramen noodles.
- In a deep skillet, heat the vegetable oil until it reaches 350F. Cook the croquettes for 3 minutes on each side, or until golden brown.
- Toss the cooked croquettes in the Spicy Beef immi spice packet. Optionally, serve with tonkatsu sauce and enjoy!
