- 3 boiled eggs
- 1 green onion, sliced
- Salt and pepper to taste
- 1 tbsp rice vinegar
- 1 tbsp Japanese mayonnaise
Instructions
- In a large mixing bowl, mash the hard-boiled eggs.
- Add green onions, salt and pepper to taste, rice vinegar, and mayonnaise. Mix well.
- Top your ramen with egg salad and chili oil!
