- 1 pack immi Spicy Red Miso ramen
- 1 cup unsweetened oat milk
- 1 cup water
- 1 tbsp white miso paste
- 1 tsp matcha powder
- 3 crimini mushrooms, thinly sliced
- 1 soft boiled egg
- Green onions, thinly sliced
- Optional toppings: soft-boiled egg, green onions, sesame seeds, tofu cubes, sautéed mushrooms
Instructions
- Boil the noodles according to package instructions, then drain and set aside.
- In a pot, combine plant-based milk and water. Heat gently (don’t boil).
- Whisk in miso paste and matcha powder until smooth.
- Add the immi soup base and stir well.
- Add mushrooms and simmer for 2–3 mins until hot and creamy.
- Pour broth over the noodles.
- Top it off with your favorite add-ons: a jammy egg, green onions and extra matcha powder for extra flair.
