- 50g roasted cherry tomatoes
- 100g enoki mushroom, torn into small bunches
- 100g shiitake mushroom, sliced
- 100g 100% lean ground beef
- 50g fish cake, sliced
- 150g hardboiled eggs, halved
- 1 Spicy “Beef” immi
Instructions
- Preheat oven to 425 F. While oven is preheating, heat a frying pan over medium-high heat. Add 1 tbsp olive oil and brown the ground beef, seasoning with salt and pepper. Set aside.
- When oven is preheated, season cherry tomatoes with olive oil, salt and pepper and roast until blistered, about 5-7 minutes. Check on them occasionally to make sure they don’t burn.
- While tomatoes are roasting, add 1.5 cups of water to a small pot and bring to a boil over high heat. Add the spice packet and shiitake mushrooms and lower the heat to medium. Cook until the mushrooms are slightly softened, about 2 minutes.
- Then, add the fish cakes and noodles, and cook for 6 minutes. In the last 2 minutes of cook time, add the enoki mushrooms.
- Assemble your ramen and top with the shiitake and enoki mushrooms, cherry tomatoes, ground beef, fish cake and hardboiled egg. Enjoy!
