Ajitsuke

Description

An easy-to-follow ajitsuke recipe that goes well with all ramen flavors.


Ingredients

Scale

2 eggs

2 tablespoons Japanese soy sauce

2 tablespoons mirin

2 tablespoons sake

½ teaspoon sugar

½ teaspoon oyster sauce (optional)


Instructions

  1. Combine all the marinade ingredients and bring them to a boil
  2. Lower the heat and simmer the marinade for one minute
  3. Set the marinade aside and let it cool
  4. Heat 2 cups of water with 1 tablespoon vinegar and 1 tablespoon salt
  5. Bring to a boil and gently lower the eggs in the water
  6. Let the eggs go on a rolling boil for 7 minutes
  7. Take the eggs out and lower them into ice water for 10 minutes, or until they cool completely
  8. Peel the eggs and drop them in the marinade for up to 48 hours
  9. When ready to serve, take the eggs out, slice each in half and add one or two halves to a single ramen bowl
